Roasted walnut oil vinaigrette

I have a hard time finding dressings that I like, but for some reason I find this simple dressing to be so incredibly yummy.

Here's what I do: get a mason jar, pour in some roasted walnut oil, then add balsamic vinegar until it equals about a third of the liquid. Add at least a teaspoon of kosher salt. Shake the heck out of it for a couple of seconds.

I really enjoy this on tomatoes as well as on a salad composed of beets and cherve.
