When I went to Karam Farm the other day to pick some Gypsy peppers, the gal mentioned that she had some Beaver Dam peppers ready to pick.
These were still in their green stage. I picked several and they were pretty hot. Grassy flavor, but no bitterness and I was impressed that they provided a bit of heat early in the season, even before the early jalepenos. They remind me of a green Anaheim pepper and could probably be used interchangeably.
